Vine age

9 years. The vineyards were cultivated as such for centuries, but were closed down in the 1940s. The soils were allowed to rest and regenerate for 6 decades.

Spontaneous fermentation in open fermentation racks, pressing after 20 days, malolactic fermentation in 500 l barrels

Storage / Removal

27 months in used 1,500l barrels. Not filtered, not embellished. 36 months on the bottle.
